Cherry Peach Oatmeal Breakfast Bake

I’m not usually a fan of leftovers, so I can rarely get away with making meals in advance around my house. But breakfast is the exception. Our busy mornings (aka every morning) runs so much smoother when I don’t have to worry about prepping a nutritious breakfast, and I know I can get something good in out tummies before we run out the door!

A few quick tips about this recipe before you get started.

You can substitute any fruit you like! I’de made it with strawberries, blueberries and bananas. You could add almost slivers or coconut shred to your oats. Go crazy!

I’ve been working hard to cut down on our families processed sugars, so I let the jelly and fruit sweeten this oatmeal bake. If you want a little something more, try adding a couple tsps. of agave syrup, or coconut sugar. I used an organic chia seed jam that we get out our H-E-B, I love it!

Are you utilizing the bulk section at your local grocers? I buy my oats at H-E-B from the bulk section, that’s the cheapest way to get them and I always have a couple canisters full of oats in my home.

This breakfast bake is dense,  I enjoy it most with something light along side it, some cold fruit, yogurt, or some fresh whipped cream!

Cherry & Peach Oatmeal Bake

Ingredients

  • 2 cups oats toasted
  • 3 tbs butter
  • 1/3 cup milk you can use non-dairy substitute
  • 4 tbs cherry jam
  • 1 tsp vanilla
  • dash cinnamon optional
  • 1 10 oz. bag peaches
  • 1 handful dried cherries
  • 4 eggs

Instructions

  1. Preheat oven to 350

  2. Spread oats on a cookie sheet, and toast them for 10-15 minutes in the oven.
  3. Melt butter and pour into 9 in round baking pan. 
  4. Dice half of your peaches and place them in the melted butter. You can really use any fruit to make this. It's delicious with strawberries, blueberries, bananas or apples!
  5. Sprinkle toasted oats on top of peaches and butter.
  6. Whisk together eggs, milk, jelly, and vanilla. 

  7. Pour egg mixture over oats. Let it sit for 5 minutes, until the egg mixture seeps down into the oats.

  8. Sprinkle with cinnamon, and top with remaining fruit. 
  9. Bake for 25-30 minutes at 350, or until the oats are golden brown and there is no more wriggle in the middle! 😉
  10. Let it sit for 3-5 minutes once it comes out of the oven. Enjoy it with a honey drizzle, yogurt, or cream! 

Recipe Notes

This recipe is highly customizable, so make it to your taste! You can use any dairy or non-dairy milk, and really any fruit that you would enjoy most.
